Where do I start with healthy eating/Losing Weight?

I actually have a few health related questions. I’m 300lbs (5′ 6″ and 21), a mother of 2 (4, and 1), and I’m looking to lose weight in a HEALTHY way. No diet drugs, or fad diets. I’ve nixed all fast food, and junk food in my house but don’t know what to replace it with. I’ve cooked healthy meals the last few days, but have had to deal with critics (my husband and son, who is now refusing to eat). I need some GOOD food ideas, what to replace the junk with, and any ideas for an exercise plan that is good for someone of my weight (or a recommended website to help). I’m just struck with complete confusion as to what to do, and how to start. I have TONS of veggies and fruit in the house but everyone is saying there’s nothing to eat. Help!
My goal is to be organic eater/cook, and more so healthy by mid-2008!

Sounds like you need to make healthier foods that your family will actually eat.

Pizza – Make it with wholegrain crusts.
Burgers – Replace beef burgers with lean beef, turkey burgers, or as I do, veggie burgers. Place it on a wholegrain bun. Cook it with spray-oil, not liquid oil, or grill it.
Seafood is always a really easy choice, and you can always add a baked potato to the side. Your hubby can add sour cream and butter, and you can add parmesan cheese, ricotta, or salsa for a healthy alternative.

Wholegrain pasta is another easy replacement; so is sweet potatoes as a high-fibre alternative to regular french fried potatoes.

Make sure when you have veg or fruit that there’s something ’snacky’ to do with it, like having peanut butter or hummus to dip veggies in, or having the fruit sliced into a pre-made fruit salad, or having vanilla yogurt as a dip.
Yogurt, sliced fruit, and granola also makes a delicious and very fancy looking parfait if you layer them in a glass.
Bagels are easy to slice into low-fat bagel chips made in the oven, and jars of unsalted, unroasted nuts are a really filling snack full of healthy fats. Baked cornchips and salsa or homemade guacamole are another, and low fat popcorn is a great snack.

Remember to stay strong with your healthy eating habits – by introducing your little one to healthy food now, you’ll spare him plenty of trouble in the future.
